RECIPE FOR MALAI KOFTA
WHAT IS MALAI KOFTA:-
MALAI KOFTA IS POPULAR AS WELL AS THE MOST SOUGHT-AFTER VEGETARIAN INDIAN DISH IN RESTAURANTS. MALAI MEAN CREAM AND KOFTA ARE FRIED DUMPLING BALLS.
MALAI KOFTA ARE MELT IN THE MOUTH FRIED DUMPLINGOF COTTAGE CHEESE. NAPPED WITHIN A CREAM SMOOTH CURRY.
METHOD OF MALAI KOFTA
- For the Kofta mash together cottage cheese (paneer) & boiled potato.
- Add chopped coriander, ginger, chopped green chilly, cornflour, salt and chopped cashew nuts.
- Mix them well and shape into round balls or oblong.
- Heat oil and deep fry till golden brown on high flame. Keep aside.
- For the curry heat oiled butter together. Add black cardamom, cardamom & caraway seeds. Stir for 15 seconds.
- Now add chopped onions and cook for 5 mins.
- Add green chilly and salt. Add chopped garlic and ginger and cook for another 3 minutes.
- Add turmeric, chilly powder, coriander powder and cumin powder.
- Lightly toss and add chopped tomatoes.
- Now add salt & cashew nuts and cook for another 5- 7 mins.
- Add 2 1/2 cups of water and cover till tomatoes are mushy.
- Now remove from fire and let it cool for 2 minutes.
- Now using a blender blend it into a fine puree.
- Strain the puree and transfer it to a clean pan.
- Bring it to a boil and add kasoori methi powder, sugar & salt to taste.
- Can add water if the curry is too thick.
- Add cream, stir and remove from fire.
- Place the kofta in a bowl and pour the hot curry on top and serve.
Hello and welcome to ZAYKA CHEF RECIPE, which is my WEBSITE, Today in my SITE(ZAYKA CHEF RECIPE), we will be making Malai Kofta. It’s very simple to make Malai Kofta, On one side we will make the Kofta(MALAI KOFTA) on the other side, the curry(MALAI KOFTA).
We will start with the curry of Malai kofta, First, we add a little bit of oil and a lot of butter. To this, we add cinnamon, bay leaf, few cloves, Black cardamon, Cardamon and some Shahi Jeera. We cook it, Now we add Onions Saute the Onions lightly. While it’s cooking, we add to it chopped green chillies and cook it nicely.
We need to note that the onions should not turn brown. We just have to cook it lightly in this stage we add garlic and chopped ginger. We again cook it lightly, Now add turmeric, chilli powder, Coriander powder and a little bit of Cumin powder Quick saute.

Now adding tomatoes to it remember the quantity ratio between Onions and Tomatoes is 1:2 To the tomatoes add salt, a few cashews and mix it well. Again, we don’t cook the tomatoes too much, just have to lightly saute till.
We get a good boil in it and then we add water to it. We cover it cook till the tomatoes get mashy and the cashews soft.
So the curry for Malai kofta is getting ready In this time we will prepare the Kofta To make Kofta of malai kofta. We have Cottage Cheese which is mashed and an equal quantity of boiled & mashed potatoes.

We add chopped Coriander, chopped ginger and chopped green chillies. Make sure that ginger and green chillies are added in good quantity to this, we add a little cornflour for binding, salt, some chopped dry fruits (optional) and we mix it well.
Time to get your hands dirty Mash it nicely Since it’s mixed properly now, take a small portion of the mixture and you can make it around or an oblong-shaped Kofta It’s done. Now we fry it Rotate the surrounding oil with the spatula, to move them in a circle. Time to pull them out They look gorgeous but delicate still Koftas are ready.
Now we have to prepare the curry Tomatoes are mashy at this stage we turn off the gas and let it cool off a little. We blend it in a mixer it has cooled off a bit, now we blend(mixture) it in this blender. Remove the bay leaf before blending now be careful as it is still hot.
It is nicely blended. First, we heat the pan then pour the gravy in it through a filter add some water, to loosen it up. We use the filter to remove any fibre from tomato or spices. So that we get a soft cream-like gravy as it is boiling.

We add Fenugreek powder with very little sugar, you can also add honey instead of sugar add a little salt and cook it nicely for 5 minutes. Now before plating, finishing the curry is done by adding some cream Give it a nice stir Turn off the gas and it’s done.
Now here’s advice (Malai kofta), We never put the Koftas in the curry, it’s always the opposite, First, we place the Koftas and then we pour the hot curry on them so that the kofta don’t break So we have our Koftas, just line them up. We have to pour the nice hot curry on this that’s it.
We place fresh coriander leaves on the top It looks beautiful with minimalistic presentation Malai Kofta done.

- Cinnamon – 1 stick
- Bayleaf – 1no
- Cloves – 3 nos
- Black cardamom – 1 no
- Cardamom – 3 no
- Caraway seeds (Shahi jeera) – 1 tsp
- Onion chopped – 1 cup
- Green chilly – 1 no
- Garlic chopped – 1 tbsp
- Fenugreek(methi) powder – 1/2 tsp
- Cream – 1/4 cup
- Ginger chopped – 1 tbsp
- Turmeric – 1/3 tsp
- Kashmiri Chilly powder – 1 tbsp
- Coriander powder – 1 tbsp
- Cumin powder – 1/2 tbsp
- Tomato chopped – 2 cups
- Salt – to taste
- Cashew Nuts – a handful
- Water – 2 1/2 cups
- Sugar – 1 tbsp

- Potato Boiled – 1 cup
- Coriander chopped – 1 tbsp
- Ginger chopped – 1/2 tbsp
- Green chilly – 1 no
- Cornflour – 1 1/2 tbsp
- Salt – to taste
- Cashewnuts Chopped – 2 tbsp
- Oil – for frying
