It's a very easy recipe. It's a spicy Bhindi with curd and spices. It's really fun to eat.

It is a beautiful Masala Dahi which I absolutely love to use in my kitchen. And for those who don't know about it, I'm going to share all the details of it in this Food blog. So, Read the full dahi wali Bhindi recipe till the end and this is a very simple recipe. I'm going to quickly tell you how to make this spicy Dahi Wali Bhindi.

Now, first of all, for this Bhindi recipe, how to buy the Bhindi, how to clean it, how to cut it is also important. I'm giving you some tips. After those tips, I'll also tell you how to make it.



So, let's see the process further. Here, I've taken 250 grams of Lady Fingers. The size of the Lady Finger should be medium. Don't take a very big Lady Finger. It's cooked and doesn't taste good. To check if the Lady Finger is fresh or not, break the tip of the Lady Finger like this. It should snap and break. If it's bending and not breaking, it means your Lady Finger is not fresh. Once you get the right Lady Finger, you have to wash it properly. After washing the Lady Finger, it's important to dry it properly.


Water is the enemy of the Lady Finger. The laciness comes out of the Lady Finger. So, dry the Lady Finger properly. Once it's dry, you have to cut it. I've washed and dried the Lady Finger. If you want to cut it, cut the top and bottom like this After that, make a slit in the middle. Make a slit and check if the Lady Finger is fresh or not. After that, cut it 1 by 2 from the middle. Cut all the remaining Lady Finger in the same way. You can see that I've cut all the Lady Finger in the same way. Now, keep the Lady Finger aside. So, we've cut the Lady Finger and kept it aside.


And the small tips that I give are for those viewers who have just started cooking and don't know about it. I'm sure that a lot of people know about it. But there are people who don't know about these tips. So, I've shared these tips for them.  Now, we've cut the Lady Finger, the next process is very simple, we have to mix some spices in the curd.



Let's see how to do that process.I've taken 1 cup of curd in a bowl,I have to add some spices to it.
1 teaspoon of spicy red chilli powder,2 teaspoon of Kashmiri red chilli powder,1/4 teaspoon of turmeric powder,1 pinch of garam masala,1/2 teaspoon of cumin powder,2 teaspoon of coriander powder,salt to taste,and for binding, I'm adding 1 tablespoon of gram flour,this is optional. But, this doesn't separate the water,it gives a good consistency.You have to mix all these things well. And when you mix it,mix it very well so that the lumps don't remain in the curd,it should become a smooth mixture so that the curd doesn't break.



Once you've mixed it, keep the curd aside. Now, to make the gravy, heat
1-2 tablespoons of mustard oil in a cooking pan. On a high flame, heat the oil until the smoke comes out.     Once the smoke comes out, lower the flame. Then, add 1/2 teaspoon of cumin seeds,1/4 teaspoon of asafoetida,2 medium sized chopped onions, 1 tablespoon of chopped garlic,1 tablespoon of chopped ginger, and 2 chopped green chilies. Stir it well until the onions turn light golden brown. Sauté the onions until the garlic, ginger, and green chilies are sautéed. You can see that the onions are sautéed. At this stage, lower the flame. And add the curd mixture that we made earlier. Stir it well for 1-1.5 minutes. After that, increase the flame and cook the masala well. The rawness of the curd, the rawness of the masala should be removed. The oil should be released well.



It will take around 4-5 minutes. You can see that after 4-5 minutes, I have sautéed it well.

The curd is cooked, the masala is cooked, and the oil is released. At this stage, it will become quite thick. So, to adjust the consistency, I am adding some hot water. By adding hot water, you will get a gravy of this consistency. Once you have adjusted the consistency of the masala, at this stage, our masala is ready.


Here, you can turn off the gas flame. On the side, you have to cook the Lady Finger.

Add 1 tablespoon of oil in the pan. Add oil and when the oil is hot, add 1 inch of ginger slices,2 slit green chillies and the Lady Finger that we had cut earlier. On a medium flame, you have to cook the Lady Finger while stirring so that it is almost 90-95% cooked. So, stir it well and cook it. The Lady Finger will also get some color on top. Once it is almost cooked, add a pinch of salt to it. Add some lemon juice and stir it. This will prevent the Lady Finger from becoming lacy.


Once you have stirred it, transfer it to our masala. Turn on the gas flame. Add a pinch of roasted dry fenugreek powder and some fresh chopped coriander. Stir it well. You have to cook the Lady Finger in the masala for 1-2 minutes so that the Lady Finger and the masala get some colour.



After 1-2 minutes, you can see that the Lady Finger is cooked well and it looks very beautiful. At this stage, you can taste it and adjust the flavors. I am adding a pinch of sugar to balance the sourness of the curd. Stir it well.You can see that our Dahi Wali Bhindi is ready.



Dahi Waali Bhindi is so easy to make.It is very delicious and when you get  tired of making it in different ways,you can try this one as well.No matter how you make it, Lady Finger is my favourite vegetable.I enjoy eating all types of Lady Finger.

LADY FINGER | भिंडी 250 GRAMS CURD | दही 1 CUP POWDERED SPICES SPICY RED CHILLI POWDER | तीखी लाल मिर्च पाउडर 1 TSP KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TSP TURMERIC POWDER | हल्दी पाउडर 1/4 TSP GARAM MASALA | गरम मसाला A PINCH CUMIN POWDER | जीरा पाउडर 1/2 TSP CORIANDER POWDER | धनिया पाउडर 2 TSP SALT | नमक TO TASTE GRAM FLOUR | बेसन 1 TBSP (OPTIONAL) MUSTARD OIL | सरसों का तेल 1-2 TBSP CUMIN SEEDS | जीरा 1/2 TSP ASAFOETIDA | हींग 1/4 TSP ONION | प्याज़ 2 MEDIUM SIZED. (CHOPPED) GARLIC | लहसुन 1 TBSP (CHOPPED) GINGER | अदरक 1 TBSP (CHOPPED) GREEN CHILLI | हरी मिर्च 2 NOS. (CHOPPED) HOT WATER | गरम पानी AS REQUIRED OIL | तेल 1 TBSP GINGER | अदरक 1 INCH (JULIENNE) GREEN CHILLI | हरी मिर्च 2 NOS. (SLIT) SALT | नमक A PINCH LEMON JUICE | नींबू का रस 1 TSP ROASTED KASURI METHI POWDER | भुनी कसूरी मेथी का पाउडर A PINCH FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED) SUGAR | शक्कर A PINCH
